Today I achieved one of my 4 simple goals and worked out a mini pickle making factory in my kitchen. Probably not the best idea on one of the hottest days of the summer, but super fun nonetheless. I made a jar of regular dills, a jar of spicy dills and a jar of super spicy pickled green beans! (One of my all time favorite treats!) 8 weeks from now I’ll let you know how they taste! I plan to eat them for my birthday. Afterwards, I cooled off with a refreshing dip in the pool! I’m so glad you’re here summer!

Betsy, please keep me posted on how they turn out! I’ve ALWAYS wanted to make pickles as well. Right before you posted your goals, I had seen this recipe (http://www.realsimple.com/food-recipes/browse-all-recipes/almost-hands-free-dill-pickles-00000000038150/index.html), but yours look oh-so-much-yummier. So, this is with the whole “boiling the jar to seal it” process? That’s what’s always intimidated me. Was it hard?
Your pickles look waaaaaay better than mine.
Couple of questions.
Did you use propper canning? Or do you plan on eating them before they go gamey?
Second, recipes? Please share.
I used “proper” canning although I used commercial jars that I just emptied and re-used. I read online that the amish do this so if its good enough for them, its good enough for me. They seem to have sealed pretty well so I’m hoping for the best. (Keeping in the fridge as a backup)
