Another awesome breakfast idea: Ham cups

What!? Ham cups!? Yes, that is what I said, ham cups. I saw this recipe online and thought it was kind of a funny idea. Upon reading it more thoroughly, I realized that this could possibly be the easiest recipe ever!  If it was truly as easy as it sounded, I figured I would never make eggs the “old way” again.

12 eggs
12 thin slices of deli ham (round)
1/2 cup of your favorite cheese (I used parmesan)
1/2 cup diced scallions
Fresh cracked Sea Salt and Pepper

  1. Preheat the oven to 400 degrees.  Spray a muffin tin with cooking spray.  Lay a piece of ham in each hole creating a little ham cup.  Crack one egg into each hole and sprinkle with salt and pepper.
  2. Bake the eggs for about 12 minutes . . . until the white is firm and the yolk is still nice and runny.

Carefully remove each egg from the muffin tin and top with grated cheese and scallions. Serve hot!

YES! These were AWESOME! So easy and delicious! The perfect idea if you are serving a brunch crowd or, only make a few, like I did, for a tasty, yet revved up, weekday breakfast! So, Betsy, I forgot to tell you when I saw you on Tuesday that I totally made these for George and I for breakfast before Vegas last Friday (or maybe I did, I was so out of it from the Vegas alcohol consumption)! This is so my kind of recipe! Fool proof, EASY, and QUICK! Weekend breakfasts have forever changed for me! Happy Friday :)
