Are you super lazy yet want to impress you friends with some awesome food? Try making your own sun-dried tomatoes! These were literally the easy project I have ever done. All you do is cut some tomatoes in half, remove the seeds, then sprinkle them with seasonings (I used a generic italian seasoning blend) and stick them in the oven for the whole day! Because of what I read online, I baked mine at 200 degrees and it took about 9 hours. I think if I did it again, I would raise the temp to maybe, 275, then bake them for shorter.
These are absolutely the BEST sun-dried tomatoes I have ever eaten! Making them yourself really makes a difference. However, The Hubs had a good point when he said “we’ll see how good they are after we get the gas bill for leaving the oven on all day” We shall see Hubs, we shall see. I put these on pretty much everything. Salads, sandwiches, pizza, quiche, mixed with eggs for a breakfast scramble, pasta, casseroles………
I’m hoping to get my garden on this spring so the tomatoes should be flowin’! Can’t wait to make these again!
