Loquat Jam

I know what you’re saying, “what the hell is a loquat?” I had no idea either until last summer. We have 2 loquat trees in our backyard. I could obviously see fruit on them, but I didn’t know what it was, or if it was safe to eat so I just pretty much ignored them.   1. I so enjoyed reading about your loquats. I was looking for a recipe for loquat jam as I had a huge crop this spring and yours was perfect. I ended up with three jars for later, a nice dish of jam for now and some wonderful syrup for pancakes, too. Thanks for sharing your recipe and the beautiful photos as well.
