Still cooking away at my random pantry items! I learned this little number from my friend, and one of my favorite vegetarians, Bridget. When we went to visit her in LA last month, she whipped a similar salad up for lunch. I loved it, and knew that I wanted to use some of my lentils this way. The opportunity presented itself when this bounty showed up on my desk at work one day.
A HUGE thanks to my friend Sarina, and her boyfriend Greg, who works at Sundial Farm here in San Diego. There is nothing like fresh produce to get my creative juices flowing (and my mouth watering). Double bonus: lots of fresh tomatoes to go along with our Seasonal Potluck! Overall this was a pretty easy venture. Cook lentils, chop vegetables, mix everything together with some leftover quinoa. Top with a drizzle of olive oil and a squeeze of lemon. Serve over greens. Ta da! There you have a delicious, nutritious meal and I didn’t have to go to the store for anything.
