Thai Crab Pasta

When the Hubs is out of town, I try to make meals that I can eat leftover for lunch the next day (and possibly dinner again the next evening) This Thai Crab Pasta from the latest issue of Clean Eating Magazine totally fit the bill. Ok, who am I kidding, I’ve pretty much been eating cookies and string cheese. I did make this pasta, and DO intend on eating it leftover, but today I’m having lunch with a friend, and tonight I’m going to a Creative Connection event, so that’s probably not going to happen today. Tomorrow FOR SURE!

I love seafood. I love Thai food. I love healthy food. Thank you Clean Eating magazine for inventing this recipe that includes all 3. No thank you to Clean Eating magazine for not posting your recipes online so I am forced to copy it from the magazine itself.

Thai Crab Pasta recipe from Clean Eating Magazie

8 oz soba (aka buckwheat) noodles or whole-wheat rotini pasta

1 T olive oil

1 red bell pepper, cut into 1-inch-long thing strips

6 scallions thinly sliced

4 cloves garlic, minced

1/2 lb fresh lump crabmeat

1 t. arrowroot powder (I used cornstarch) 

1 T low-sodium soy sauce

juice 1 lime

8 c. fresh spinach (1/2 lb) 

1/2 c. fresh basil, chopped

1/4 c. fresh mint, chopped

Bring a large pot of water to a boil. Add noodles, stir immediately and reduce heat to a rolling boil. Cook according to package directions. Reserve 1/2 c. pasta cooking water. Drain noodles and transfer to a large bowl. 

In a large skillet, heat oil on medium. Add pepper, scallions and garlic. Saute, stirring occasionally until pepper softens, about 5 minutes. Add crab and toss to combine. Meanwhile, in a small bowl, add arrowroot and reserved pasta cooking water. Whisk with a fork, gradually adding soy sauce and lime juice until well blended. Add mixture to skillet, stirring constantly until sauce is slightly thickened, about 1 minute. Add spinach and cover to steam, about 3 minutes. Pour entire mixture over top of noodles, sprinkle with basil and mint, and toss to combine. 

My workout yesterday was my current favorite video on demand from exercise TV: 10lb slim down extreme kickbox. Its 40 minutes of cardio kickboxing, and is the only workout I have ever deemed “fun” I guess maybe I have some agressions to work out that I didn’t know I had!
