I wrote about the freezer meals I made for my pregnant friend Courtney yesterday. Well today I’m sharing the dessert I’m making for her baby shower on Saturday.
Courtney loves red velvet cake which is not exactly my favorite. I just don’t get it. I usually call it faux chocolate cake. To boost it up a bit for the rest of us, I decided to fill it with cream and coat it in chocolate just like those yummy treats of our youth. I was actually inspired to make this project after I read about my friend eating something similar at a food festival.
It definitely took some trial and error, but I determined the best method of filling these cakes was the same one I use for filled cupcakes. First, I baked the cake in a 9X13 pan. I used a mix since I wasn’t sure they were going to turn out at first. For the final product, I’ll use the Red Velvet Cake recipe I make for Courtney’s birthday every year. I cut out circles using a cookie cutter once the cake was cool. Then, I cut out a little hole using a pairing knife and filled each one with the cream filling.
Marshmallow Cream Filling recipe from 52 Kitchen adventures
- 2 T unsalted butter, at room temperature
- 1/2 C powdered sugar
- 1 t pure vanilla exrtact
- 1-2 T heavy cream
- 2 C marshmallow creme
Cream butter with a mixer until light and fluffy. Beat in powdered sugar, then add vanilla and 1 tablespoon of heavy cream. Beat until smooth. Mix in the marshmallow creme. Add more cream, powdered sugar or marshmallow creme until you reach your desired consistency and flavor.
I replaced the tops and melted some chocolate in the microwave for dipping. As many of you know, I’ve never had much luck dipping things in chocolate. Of course when I tried to dip these, I ended up making a huge mess. I then decided to first “paint” the tops and sides of the ding dongs using a basting brush dipped in melted chocolate, and waited for them to cool and harden. Then I flipped them over and “painted” the other side. Yes, it was a lot of work, but its for one of my best friends and her first baby so I’m happy to go the extra mile. I hope the rest of the shower guests love them!
