Its seems like Camp Blogaway is the gift that keeps on giving. There was a lot of talk about whether or not you should accept free stuff from sponsors at the conference. For me, I see it as a source of inspiration, a thing that I am constantly in search of. Let’s be honest, a chicken breast can only provide so much inspiration. Same goes for most ingredients. When I go to events like this, I’m really looking for new ideas either from the participants, sponsors or swag items. Let me tell you, there was plenty to be found at Camp Blogaway!
One of the participants was the loveliest woman, who goes by Mimi Avocado. I got to hear her story about how she moved to California, met her husband, and became an avocado farmer. Now, many of you don’t know this about me, but I’ve spent my fair share of time roughing it in the wilderness, and truly consider myself a nature girl at heart. With that comes a secret desire to live on a farm some day and lead a beautiful, outdoor life. Especially an avocado farm since I LOVE avocados!
Mimi brought avocados from her farm for all the camp participants, and that immediately got my head spinning about what to make. Its avocado month over at Seasonal Potluck which is always a great source of inspiration, but I wanted to try something else I’ve seen floating around the internet lately, stuffed avocados! Um, hello, I’ve been eating avocados for years. Why haven’t I thought of this before!?!?
Thanks to a couple of other Camp sponsors, Roland Foods and Mooney Farms I already knew what I was going to stuff them with. When unpacking my swag bags, I found a package of Roland Foods lemon quinoa, and a package of Bella Sun Luci sun-dried tomatoes. I made the quinoa according to package instructions, then chopped up some tomatoes and threw them in. I sprayed each avocado half with some cooking spray, and grilled them for a few minutes until charred, then stuffed them with the quinoa mixture. I topped the whole thing off with some feta cheese, and served it with a light salad. Oh, who am I kidding, the Hubs was out of town so I didn’t “serve” anything. I just gobbled it all down while surfing the internet on the couch. It was AH-MAZE-ING! I think this is my new favorite way to eat avocados!
I want to say thank you so much to Mimi for sharing her avocados and her story. I am looking forward to visiting her on the a farm soon to see what life as an avocado farmer is all about (and see if that’s maybe my next career. ha!)
