There’s no such thing as too many cookies this time of the year. Even before Jen and I had our annual cookiepocalypse, I was baking up a storm getting ready for this year’s Food Blogger Cookie Swap . This cookie swap is a super fun online party where I randomly got assigned 3 bloggers to send cookies to, and in exchange, I received 3 types of cookies from 3 other bloggers. Let me tell you, nothing beats coming home to a box of cookies on your doorstep. Ok, maybe if it was a box of cash it would be better, but cookies is almost as good!
After many ideas, and careful consideration, I decided to try out some lemon creme sandwich cookies for this year’s swap. (Actually, I just had a craving for lemon that day). These cookies turned out great, and I think (based on twitter/instagram feedback) my recipients enjoyed them as well!
Lemon Creme Sandwich Cookies
For the cookies
- 1 stick (1/2 cup) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp lemon extract
- 1 tsp Gourmet Garden Ginger
- 1/2 tsp vanilla extract
- 1 1/3 cup flour, sifted
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups confectioners’ sugar, sifted
- 2 Tbs fresh lemon juice
- 1/2 teaspoon vanilla extract
- zest from one lemon
Cream together butter and sugar in the bowl of a stand mixer. Add in egg, lemon extract, ginger and vanilla extract. Add flour, baking soda and salt and mix well. Drop by teaspoon onto lined cookie sheets. Bake 7-8 minutes in a preheated 350ºF oven. Cool to room temperature before assembling.
To make the creme filling, whisk together all ingredients until smooth.
Spread a cookie with 1 Tbs of creme filling and top with another cookie. Enjoy!
Of course I can’t forget about the 3 delicious types of cookies that I received as well. The first cookies to arrive were chocolate hazelnut cookies from Beth of Jersey bites blog . She’s a black lab owner too!
Then came my personal fave, white chocolate-pecan cookies from Victoria of KplusV. The Hubs doesn’t love nuts in his cookies so I had the pleasure of eating all these myself! YUM!
Finally I received the most beautiful Chocolate Sugar Cookies I’ve ever seen. Diana from Diana’s Dream Sweets puts my cookie decorating skills to shame!
