Food Blogger Cookie Swap: Chewy Peppermint Bark Cookies

One of my favorite parts of the holiday season is participating in the annual Food Blogger Cookie Swap. Not only do I get 3 separate shipments of cookies from food bloggers all across the US and Canada, but it’s also a really fun way to raise money for charity.

This year the Food Blogger Cookie Swap raised over $13,000 for Cookies for Kids’ Cancer . Hooray! Talk about the best gift to give this holiday season.

My contribution to the swap were these chewy peppermint bark cookies. I’m a peppermint bark fanatic, and decided to chop some up and stir it into cookie dough. Let me tell you, it was an excellent decision on my part. These are in the running for favorite holiday cookie ever.

Chewy Peppermint Bark Cookies
 
Ingredients
  • ½ cup unsalted butter, softened
  • ¼ cup cream cheese, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2¼ cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1¼ cup peppermint bark, chopped
Instructions
  1. In the bowl of a stand mixer, cream together butter, cream cheese, and sugars until light and fluffy. Add in egg and vanilla.
  2. Slowly add flour, cornstarch, baking soda and salt. Scrape down the sides of the bowl then continue mixing until everything is well combined.
  3. Fold in chocolate chips and chopped peppermint bark.
  4. Refrigerate dough for at least 2 hours, but I recommend overnight.
  5. Heat oven to 350 degrees.
  6. Drop heaping tablespoons of dough onto cookie sheets covered in parchment paper.
  7. Bake for 8-10 minutes. Cookies may seem undercooked slightly but will firm up as they cool.

The really great part of the swap is connecting with other food bloggers from near and far. I got some majorly awesome cookies this year.

The Hubs, a bonafide cookie-a-holic was thrilled with our first shipment from Karyn the Pint Sized Baker. We got not one, but THREE types of cookies from Karyn.

Our next shipment came from Angela at Shake, Bake and Party (GREAT blog name BTW). Her note called them Cranberry, Pumpkin Cheesecake Cookies which we both thought sounded kinda crazy.

photo-14 Hole-eeee-crap! These were maybe the best cookies I’ve ever had! The texture was PERFECTION, and the white chocolate and pumpkin spice flavors together were divine (and totally unexpected!) They did not last very long. Like, not even to the end of the day.

Last, but never least, we got some adorable meyer lemon meringues from Meghan at Stir and Scribble. What a wonderful, light treat to follow up all the chocolately, jammy, buttery goodness of our other cookie deliveries. I’m a sucker for all things lemon so these got me really excited. You know what else got me excited? The bottle of homemade bourbon vanilla extract she included in the box! YES! Awesomest. Surprise. Ever.

Well, another year, another cookie swap has come and gone. Man, its kind of like the day after Christmas, mildly depressing. Guess I’ll go drown my sorrows in cookies! haha! Until next year……

    Hi Betsy! Real talk: I’m not really one for peppermint in baked goods. And then I ate one of your cookies, and another….and maybe three more. And then I became a convert. I don’t know how you did it but these little beauties were divine! I can’t wait to try to make them on my own! Thanks so much!
