I join these blogging groups as a source of inspiration. I like having a jumping off point for creativity, and I like the camaraderie of producing something as a group. Sometimes, however, the ideas don’t come as easily which was the case with this month’s “Fresh and Fruity” theme.

You’d think if the topic was beautiful and colorful fresh fruit I’d be drowning in ideas. You’d be wrong. I’m not sure why it was such a struggle for me to come up with something to fit this month’s theme. I always try to think of something unexpected, but I could only come up with “predictable”ideas this time around.

After wrestling with, and losing to, a tropical stuffed french toast idea, I changed directions and made these simple mixed berry panna cottas. The Hubs said to me, “What’s panna cotta?”, my reply was, “pudding.” Essentially that’s all it is. A smooth, creamy vanilla pudding, topped with a fresh berry compote. It’s very easy to make. Perhaps not something that you’ll see and say “Wow!” about, but I guarantee deliciousness, and that’s all that really matters in the end.

Mixed Berry Panna Cotta
For the Panna Cotta
  • 1 cup whole milk
  • 1 packet unflavored powdered gelatin
  • Seeds from one vanilla bean or 1 tsp vanilla extract
  • 3 cups heavy cream
  • ⅓ cup honey
  • 1 Tablespoon sugar
  • Pinch of salt
For the mixed berry sauce
  • 2 cups assorted fresh berries
  • 1 ½ Tablespoons sugar
  1. Pour milk into a heavy, small saucepan. Sprinkle the gelatin over the milk and let stand for 5-7 minutes to soften the gelatin.
  2. Begin to stir over medium heat just until the gelatin dissolves but the milk does not boil, about 5 minutes. Stir in the vanilla.
  3. Add the heavy cream, honey, sugar, and salt and stir constantly until the honey and sugar dissolve, about 2-3 minutes. Remove from the heat and let cool slightly.
  4. Divide the mixture evenly between 6 glasses.
  5. Cover each glass with plastic wrap and refrigerate until set, at least 6 hours and up to 2 days.
  6. Combine the berries and sugar in a small saucepan.
  7. Heat over medium-low heat until softened. Continue to stir until the sauce thickens slightly, about 15 minutes. Remove from heat and cool completely.
  8. Spoon berry mixture over panna cotta and enjoy.
