I know “summer is over” but holy hell is it hot here in San Diego. Due to our lack of AC, I’ve been unable to turn on the oven for more than a week now with no relief in sight. Fine by me as I can survive on cucumbers dipped in hummus, but not so good for you, my fabulous blog readers.
Even as riveting as I try to make them sound, meals such as bomb pops and cheese slices, or peanut butter sandwiches do not equate to a good blog post.
So I turned to my old pal the internet to scrounge up some actually interesting and delicious sounding hot weather meals that require little or no additional heating of your home! Thank god. I’m starting to get REALLY hungry and I don’t think its possible for me to move from in front of this fan.
Of course I’ll start off with a personal favorite from my archives, Arugula Salad with Tuna and White Beans. The only effort required is opening a can and a little bit of chopping.
I’m also loving the preparation part of this Chickpea Salad with Fresh Ginger from The Yummy Bits, “In a large bowl combine all ingredients” Yes! That’s about all the energy I can muster these days.
Maybe I’ll save my cucumber slices for this Avocado Pesto Egg Salad from Avocado Pesto. Sounds way better than plain hummus!
Salad is always my go-to hot weather food, and this Summer Veggie Salad with Garden Herb Dressing from Edible Perspective is simple, beautiful, and looks majorly filling.
The Hubs loves a cold noodle and I think he would be all about these Soba Noodles with Sesame Tahini Sauce from Je Suis Alimentageuse.
Or what the hell, I’ll just have dessert for dinner. This Chili-Ginger Granita from the Garum Factory is the perfect balance of cool, sweet and savory. I think I could live on this indefinitely!
Seriously. I’m dying over here folks. If you have a no cook, or minimal cook meal to share, please leave a comment! I’m begging you to save me from the extreme sweating involved in preparing an actual meal.
