What a day! I spent LITERALLY almost all day making this Coconut Cake from scratch…with real coconuts. I made a HUGE mess but had a lot of fun, and learned a lot. I know not everyone is a coconut fan, but I am wild about coconuts so this was a real treat for me!
I’m not sure I would recommend this recipe to everyone since it took SO LONG to make and is not super coconutty in flavor (although still very delicious) Also, although I’m not a trained chef, I do consider myself an above average amateur cook and this recipe was challenging even for me.
As a woman who is married to a southern boy, I’ve had myself a coconut creme cake or two. My mother in law is an AMAZING cook/baker and is one those women who can whip up a picture perfect dessert, without a recipe, at a moment’s notice. I’m not sure she uses a recipe for her UNBELIEVABLE coconut creme cake, but when I asked for the recipe, she gave me this one: Jamie’s Coconut Creme Cake (made by another true southerner) and said it was pretty much the same. It’s become a tradition in our house that I make this coconut creme cake for christmas every year. If I had to recommend a coconut cake recipe, this one would be it. It is still time consuming but it has the ultimate coconut flavor and texture and is well worth the work.

First step was getting the water out of the coconuts. I started with a hammer and nail but wound up using a screwdriver
I warmed the coconuts in a 350 degree oven for 25 minutes in order to get them out of their shells easier. It still was NOT easy. In fact, I ended up shredding it out of the shell because once I broke it open I STILL couldn’t get it all out and was afraid I was going to cut my hand off trying.
I couldn’t help thinking about Survivor while I was doing all this.
I toasted the coconut (one batch a little TOO much) in the oven and baked the cake
The frosting was really hard (I ALWAYS have issues with frosting). It tastes good, but kind of looks like marshmallow fluff. Its not exactly the right consistency so it kind of oozed off the cake. Oh well, like I said, it tastes good so that’s all that matters.
Off to do some “real” work that I put off all day while making this cake. Hope you all got to do something enjoyable today as well. Happy Friday tomorrow!
