This was a very productive weekend for me. We’re hosting Thanksgiving next week and I plan to eat outside, and our yard really needed some maintenance. The Hubs is out of town so it was up to me to wrangle the foliage on my own. I pruned trees and bushes, raked leaves, cleaned and deflated all the pool floats (frown! pool season officially over) and re-potted some overflowing plants. I’ve got sore muscles and dirt under my nails, and I felt like I could use a real comfort meal.
For my birthday, my mother in law gave me “Barefoot Contessa, Back to Basics” cookbook by Ina Garten. Her recipe for cream of tomato soup really caught my eye and seemed to be just the thing to soothe my tired body. This recipe was so easy to make and turned out AMAZING! I actually said WOW! out loud after tasting it, and texted The Hubs to tell him how good it was. (That probably didn’t make his on the road, fast food meal taste any better. Sorry!) I ate it with miniature grilled cheese sandwiches because everything is more fun in miniature.

***A little tip. I do not have a food mill. I blended the soup in a blender, then poured it through a fine strainer and the texture turned out perfectly! I use google for EVERYTHING! If I don’t have a tool or ingredient for a recipe I always google “food mill substitute” or whatever it is that I need substituting for.
