I’m kind of caprese salad obsessed. If its on a menu somewhere, I almost always order it even if tomatoes aren’t in season (which is probably not the best idea) I saw this recipe for caprese muffins on one of my favorite blogs, The Kitchenarian, long ago, and have had it saved on my desktop just begging to be made.
Finally I got around to it, and they were delish as expected! I would just like to say that savory muffins rule. Especially when you’re super busy like I am, they are easy to grab-and-go. It’s like a mini meal, and is great for preventing those I’m-starving-but-don’t-have-time-to-stop-for-lunch-let’s-just-drive-thru moments. Not that these are the healthiest things in the world (although I’m sure they could be made healthier), but they’ve got to be better than Taco Bell right?
Next time around I would definitely cut my cheese (hee hee) smaller. The cheese pockets kind of oozed out while baking, as I’m sure you can see from the photos, and I think smaller chunks would have provided a better disbursement, and kept it inside the muffin better. I’m excited to make these again this summer with stuff from my yet-to-exist garden!
Caprese Muffins recipe from The Kitchenarian
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup cubed mozzarella cheese
½ cups chopped sundried tomatoes
3 tablespoons finely chopped fresh basil
1 cup buttermilk
2 tablespoons oil from sundried tomatoes
1 tablespoon olive oil
Preheat oven to 375 degrees. Grease a standard muffin paper or line with muffin papers. Mix flour, baking powder, baking soda and salt in a large bowl; set aside. Cube the mozzarella cheese. Chop the basil. Chop the sundried tomatoes. Add these three ingredients together in a small bowl; set aside. Beat the egg together with the buttermilk and the oil, Make a well in the center of the dry ingredients and pour in. Mix until just blended. Add the cheese, tomatoes, and basil. Bake for about 15 minutes until a tester inserted in the muffin comes out clean. Makes 12 muffins.
