Do you ever have one of those days where you decide you’re going to make a “big breakfast”? I had one of those days this weekend, and I think I might have gone a bit overboard! It all started with Ina Garten’s Buttermilk Cheddar Biscuit recipe. I’m not usually a huge biscuit fan, but The Hubs loves them and, I have to say, the photo in her cookbook looked very yummy! Biscuits are one of those food items that are so personal I was a bit intimidated to make them. I was worried about them being too dry and not fluffy enough. The dough was a bit deceptive as well. I definitely thought it looked a bit flat before I put it into the oven. Thankfully, they turned out great! I had nothing to worry about. They were fluffy, flaky and moist and SO much easier than I thought they would be! I think these made my southern born husband proud.
Of course biscuits weren’t enough to satisfy this breakfast craving. I had to top it off with eggs, hash browns AND bacon! OMG I was stuffed for HOURS! Big breakfast always seems like a great idea until you’re left feeling uncomfortably full in the aftermath!
