If you all watch The Soup like me, when you think tetrazzini you think of this lady. I’m not sure exactly what makes something a tetrazzini……seems like a regular ol’ casserole to me, but hey, whatever you want to call it, it makes a great leftover meal.
My mom would make this for us when we were kids. I altered THIS cooking light recipe to suit my already stocked pantry and my personal tastes. I used broccoli instead of peas and omitted the mushrooms because I’m not a fan of either. I substituted greek yogurt for sour cream, and used angel hair instead of vermicelli because I already had it on hand. (My mom used to use spaghetti) Pretty much just mix everything up with the leftover turkey, top it with bread crumbs and bake! Suspiciously casserole-like but we’ll go with tetrazzini!
Getting low on leftovers! (Finally!) I’m looking forward to some healthy cooking in the upcoming weeks. As much as I love the holiday binge fest, it does make me a bit sluggish.
You can probably tell from my photos I got home from work a bit later today. Is it summer yet? This daylight savings time is NOT my fave.
