Hey guys, hey Monday. How’s it going? The weather is perfect today and its been distracting me from work. I can always do my work once the sun goes down I suppose. I had a pretty good weekend filled with sun, friends and music. Nothing to complain about! Unfortunately, after laying in the sun all day yesterday, we didn’t make it to our usual, Sunday night, concert in the park by our house. Instead I napped on the couch. Still awesome!
I had intended to make these “pizza sandwiches” for us to take the park for the concert, but since we missed it, I just made them for me today for lunch (there’s one leftover for The Hubs too). I’m not sure where I recently saw this idea (I scoured my browsing history trying to find it), but I thought it would be a nice, way to spice up the regular ol’ sandwich (of which, I am not a huge fan) for our Sunday picnic dinner. I know wherever I saw the idea they called it “pizza sandwiches”, but it seems more like a hot pocket to me! Of course you can fill this with anything you want, but I used shrimp, pesto, tomatoes, onion and mozzarella.
Hot Pockets, Pizza Sandwiches, whatever you want to call it
1 can refrigerated pizza dough cut into 3rds
1 c shredded mozzarella
3 T. prepared pesto sauce
1 c. cooked shrimp
3 T. thinly sliced red onion
1 small tomato thinly sliced
Preheat the oven to 425 degrees. Spread each 1/3 of the pizza crust evenly with all the ingredients. Carefully fold each dough section in half and crimp the edges with a fork (or your fingers). Bake for 13 minutes. Cool slightly before serving.
***You could totally make these smaller for kids. Even into mini bites if you have the time!
