Busy lately? Can’t find time to eat breakfast? Yeah, me too. This month has been a tough one for me. I’ve been in a state of limbo between old job and new. Plus, I was out of town, and away from my usual routine which is always followed by at least a week of catch up. I’m really looking forward to getting myself together again in August.
On that note, I’d like to say thank you to my wonderful readers. I know my posts have been scattered, unfocused and maybe a bit wishy washy lately. My mind has been in a million places at once, and my commitments have spread me very thin. I promise to you, loyal readers, that in the following months I’ll be back to my usual, thoughtful, posting filled with good photos and recipes. Thank you for sticking with me through this time. For those that feel overwhelmed like I do currently, or have felt like this in the past, try these quick, easy, portable granola bites. Great for breakfast or a snack on the go. Or, for 3 meals a day if you’re really, REALLY short on time. They’ll sustain you.
2 1/2 c. granola cereal**I used Sunbelt bakery
1/2 c. peanut butter
1/2 c. agave nectar
1/2 c. dried mixed berries
Mix all ingredients together well in a large bowl. Spoon into mini muffin wrappers or a well greased muffin tin. Bake at 350 degrees for 8-10 minutes until golden brown. Stuff your purse full of them and get on with your day knowing you will be well fed.
