This is one of those weeks where nothing seems to be going right and writing The Great List is kind of a challenge. I’ve been sicker than I’ve been in years. So sick that I missed work, had to go to the doctor three times (so far), and cried to The Hubs on Wednesday out of pure exhaustion and frustration. Then, on Thursday, I narrowly avoided a car accident which resulted in Olive’s head cracking my windshield. After several hours at the vet, she’s doing fine now, but I don’t think my “mom guilt” will ever go away. Despite the emotional roller coaster, I’m grateful for these few minutes to let go of all the crazy, and reflect on the Great things that happened. There’s always something.
1. Flat Stanley came to visit once again! As an Aunt of 10 and counting, I’m always happy to participate in my nieces and nephews lives in any way. My 6 year old niece, Berkeley, sent us Flat Stanley earlier this week. So far, we’ve spent a lot of time on the couch blowing our noses, but we were able to bake a bundt yesterday when I started to feel better. I let Flat Stanley pour the ganache. He’s an excellent helper despite being overdressed for the kitchen. Side note: for some reason Olive is terrified of him. It’s actually kind of hilarious.
2. Speaking of bundts, I’ve been working on this one bundt recipe idea for months. This week was my 3rd attempt, and although its not EXACTLY what I envisioned, its my closest try yet, and I think it might be as good as its going to get. I’ll let The Hubs co-workers be the judge today when he takes it to work with him.
3. I have the best neighbor ever. When she saw on Facebook I was sick, she came over to relive me of my puppy duties on Wednesday when I was at my lowest point. There’s nothing worse than being sick and having an 8 month old puppy in your face jumping around to go to the park, and getting into mischief because she’s so bored. Britta took her to play with her dog Clayton for 3 hours, and dropped her off exhausted and ready to nap.
4. I just realized that I had two gallon jugs of apple cider vinegar, each half full, stored in separate parts of my kitchen. I was able to combine them and free up some much needed storage space. Seriously people, sometimes its the smallest things.
