I think grilling avocados has become my new favorite thing. I love the smoky flavor that a little char gives them. Ever since I made that grilled, stuffed avocado last week, I can’t get grilled avocados out of my mind. You know what the best part is? No guilt! I can eat as many grilled avocados as I want, because they are good for you, and because they are fresh and in season right now.
This salad is packed with nutritional goodness, and is super seasonal. Just ask Seasonal Potluck! It’s a perfectly refreshing meal for these warm-but-getting-warmer spring days!
Grilled Avocado Salad with Jumbo Prawns recipe from California Avocado Commission
For the salad
1-5oz bag baby lettuce greens
chili-lime vinaigrette *see recipe
1 ripe mango, peeled and diced into 1/2 inch cubes
2 ripe, fresh avocados, skin on, cut in half and seeded
2 tsp olive oil, divided
8 jumbo prawns
salt and pepper, to taste
1 lime, cut into wedges
For the vinaigrette
1/2 orange juice
2 T. raspberry vinegar
1/2 lime, juiced
1 tsp. sugar
1/4 corn oil
pinch of crushed, dried chilis
pinch of salt
For the Chipotle Aioli. Optional **I omitted this part
1/4 cup mayonaise
1 tsp. finely diced green onion
1 sprig of cilantro
1/2 T chipotle pepper sauce or diced chipotle pepper in adobo sauce
1 T. lemon juice
1/4 clove garlic, minced
salt and pepper to taste
Prepare chili lime vinaigrette by whisking ingredients together to combine. Set aside. Prepare chipotle aioli by mixing all ingredients. Reserve, chilled, until ready to use. Toss baby greens with vinaigrette, using only as much dressing as you prefer. Divide salad onto plates. Sprinkle salad with mango cubes.
Lightly oil the cut sides of the avocados. Grill over hot coals, or on a grill pan, fruit side down, until nice grill marks appear, about 2-3 minutes. Turn over and grill skin side down for about 1 minute. Lightly oil the prawns with remaining oil. Grill prawns over hot coals or on a grill pan until pink, about 3-4 minutes. Sprinkle with salt and pepper.
Slice avocado and add to salad. Add grilled prawns to salad. Serve with chipotle aioli if desired. Garnish with lime.
