I want to wish a happy 30-onederful birthday to my friend and mexico traveling pal Courtney! I know its not always awesome to have you’re birthday directly before or after a major holiday, so I wanted to make her a birthday cake that we could all enjoy on Thanksgiving (and sing happy birthday)
I make a birthday cake for all of my friends each year. Usually, I ask the person’s significant other what their favorite type of cake is, and then make that. This is actually pretty amusing. Try asking your husband or wife if they know what your favorite flavor of cake is. The most common answer I get is “hmmmm, good question” Anyway, Courtney’s husband Adam’s answer was “I think she likes that red velvet cake but definitely not plain vanilla or chocolate” Turns out, red velvet IS her favorite type of cake with plain vanilla coming in second 🙂 For the record, my favorite cake is ice cream cake or yellow cake with chocolate frosting. The Hubs favorite cake is cookie cake or carrot cake!
I’d never made red velvet cake before because I’m personally not really a fan of it, but the birthday girl gets her wish! I googled “best red velvet cake recipe” and opted for this one from pinchmysalt.com mainly because the pictures looked so good. Well, lo and behold this cake really surprised me. It turned out fantastic!
