I’ve been on a huge ricotta cheese kick lately. I’ve been making a big batch about every other week (super easy) and eating it with everything. I mean EVERYTHING! Besides the lemon, ricotta, blueberry pancakes and the ricotta apricot cake I posted about recently, I’ve been eating it spread on cucumber slices, mixed in with my mashed potatoes, and even on my sandwiches.
My favorite way to eat ricotta though, is spread on a piece of toast and topped with whatever I’m craving at that moment. Here’s some of my favorite recent combinations.
