I’m pretty sure everyone’s mom/aunt/neighbor makes some version of this salad. Its a potluck staple for sure. Its like summer hot in San Diego right now, which I’m LOVING, but it makes it difficult to turn on the stove and cook. Last night I threw together this salad, and am now polishing off the leftovers for lunch. Ahhhhh, reminds me of a summer picnic.
Asian chicken salad I have no idea where I got this recipe, that is how long I’ve been making it
3 T margarine
1 pkg oriental ramen noodle soup mix
2 T sesame seeds
1/4 c. sugar
1/4 c. white vinegar
1 T. vegetable oil
1/2 t. pepper
2 c. diced, cooked chicken
1/2 c. dry roasted peanuts
4 green onions, chopped
1 16oz. bag coleslaw mix
Melt margarine in skillet over medium heat. Stir in seasoning packet from noodles. Break noodles into bite sized pieces. Stir noodles into butter mixture. Cook 2 minutes stirring constantly. Stir in sesame seeds. Cook about 2 more minutes until noodles are golden brown.
Mix vinegar, sugar, oil and pepper in a large bowl. Add remaining ingredients and noodle mixture. Toss to coat
