Luckily it never gets TOO hot here in coastal San Diego. If its in the 80’s, its the top story on the news (heat wave!), if it gets into the 90s then its just insanity. Most beach homes around here don’t have heat or AC (we have heat, no AC), that’s how mild it can be. The past 2 weeks have been pushing the “too hot” envelope for me. Its topping out right around 80, which is great if you’re laying out by the breezy ocean, but not so great if you’re sitting in a sun drenched home office, sweating your ass off and wishing you had another fan.
This morning, I went for a run at 6:15am in hopes of beating the heat. Total fail. It was full sun, and much warmer than I would have liked at that hour. I still pushed through, and I’m glad I did it, but once I got home, I could NOT stop sweating. I showered: still sweating. I drank a ton of water: still sweating. I stood under the ceiling fan: still sweating. I just kept thinking “I need a popsicle” (or a walk-in freezer). Now, it probably wouldn’t be appropriate to have one of these boozy popsicles first thing in the morning (that’s not to say I wouldn’t do it), but they were a hit over the hot, sunny weekend, and I will definitely keep my freezer stocked all summer long!
Margarita Popsicles recipe from Confections of a Foodie Bride
- 1/2 cup sugar
- 1 cup water
- 1 cup fresh squeezed lime juice (10-12 small limes, fewer if larger)
- 1/2 cup silver tequila
- 1/2 cup orange liqueur
- lime wedges/slices for garnish (optional)
- 12 3 oz disposable paper cups
- 12 wooden popsicle sticks or spoons
*****NOTE: I saw another recipe that said to cover the cups with foil from the beginning and poke the sticks through. The foil would support the weight of the stick until the liquid froze. Worked like a charm!
I hosted a lot of people, so I wanted to make a big batch of these. I ran out of orange liqueur,so I made a second batch with tequila and store bought margarita mix. Those ones froze better, but the first batch was definitely stronger!
Less than 24 hours until I leave for vacation! Yay! Now to just power through this workday, laundry, packing etc. so I can get out of here and see my whole family including ALL the nieces and nephews!! I’m really excited. Those kids are just hours of entertainment!
