The Hubs and I had a really fun weekend. We had some pints of Guinness at an Irish bar on Friday night to get our St. Patty’s day on, then on Saturday we went to a party celebrating the wedding of some friends of ours. It was great hanging out with my favorite group of work colleagues/eaters of all the dessert foods I prepare. Gap Intelligence is definitely a fun bunch. The party had great mexican food with the highlight being the nacho cheese fountain. Yes, you read that correctly! I’ve never been a huge fan of a chocolate fountain. I mean, cool for a minute, fun to dip stuff in, but overall I’m not a huge sweets person. Turn that same chocolate fountain into a glorious, cheese gushing masterpiece, and you have a friend in me for life! It was awesome
On Sunday we lazed around the house watching NCAA basketball. I made these healthy stuffed tomatoes for a little mid-afternoon snack. So very easy to make. Broil your tomatoes just until they start to blister, then mash some goat cheese with some marjoram, salt and pepper. You can either cut a little hole in the tomato, and fill them that way, or inject them using a pointy frosting tip like I did! Thanks Martha Stewart!
