Hello, my name is Betsy and I’m a picnic overachiever. While other people can claim success at hosting amazing birthday parties, or making the best Halloween costumes, I really excel at having the best dang picnic spread you’ve ever seen. I can’t help myself. The thought of lugging blankets, chairs, baskets and utensils to a scenic location only to be served store-bought potato salad and a peanut butter and jelly sandwich makes me shudder.
If we’re going to picnic, we’re going to picnic right!
Our favorite summer picnic takes place each Sunday during the concerts in the park series near our house. The whole neighborhood comes out with their picnic dinners to enjoy some fun music and an early evening dance party. I start planning my menu way in advance each week to ensure that I have the most impressive spread of all. Competitive picnicking……it’s my illness.
This year I’m stoked because I’ve discovered Wheat Thins Popped Chips. Cheese and crackers are pretty standard picnic fare, but Wheat Thins Popped Chips are much more than your average cracker. Not only do they pack a majorly satisfying crunch, they also have more than 10g of whole grains, and only 130 calories in 26 chips. Wheat Thins Popped Chips are definitely one of my new picnic essentials.
For this year’s inaugural concert, I’m serving Salmon BLT’s on crusty rolls with a thick spread of avocado. On the side we’ll be enjoying spiraled zucchini “noodle” salad with fresh grown tomatoes and feta cheese, and of course my new must have snack, Wheat Thins Popped Chips. Jealous? I hope so!
Don’t worry, there’s plenty to share. If you’re interested in picnicking head to head with me, leave a comment, and tell me what your picnic essentials are. Don’t forget to pick up some Wheat Thins Popped Chips in the cracker aisle, and meet me at the park.
