Well I managed to survive Las Vegas once again. I had such a fun time catching up with old friends, playing craps (winning at craps wahoo!) and dancing the night away at our friend’s wedding. I’m old enough now to know better than to try to work on the Monday after Vegas, so I took today off to re-coup by spending some quality time on the couch and drinking lots of water. Poor Hubs had to go to the office, so I wanted to be sure he had a hot dinner when he got home. For a super easy, comfort food hangover meal, I opted for make your own baked potato (and corn on the cob since you always have to eat some sort of vegetable)
I make my baked potatoes perfect by coating them in olive oil and kosher salt then baking them directly on the rack at 425 Degrees for about an hour (depending on size) Totally minimal effort. My condiments of choice are ranch dressing, melted cheese and bacon, while the Hubs opted for salsa instead of the ranch. Note: ok, this is not the healthiest meal I’ve ever made.
