Oh man, I am still recovering from another epic JSFF weekend! I had the BEST time catching up with old friends, enjoying the beautiful, summer-like weather, and dancing till dawn! Since my brain is working at about 60% capacity today, I really needed a SIMPLE meal tonight. The Hubs is doing some new diet where he eats only lean protein and vegetables, so this simple taco salad is a good match for him. Like many home cooks, I subscribe to the “if you don’t like what I’m making for dinner then you don’t have to eat” philosophy. However, it just happened to work out today that what I wanted to make for dinner was also something that worked for The Hubs and his “diet”
I’m staring down the barrel of another insanely busy week. Don’t worry though, I somehow always find time to make some delicious eats and blog about them!
