It’s been a busy summer, and my friends and I have been all over the country in the last couple months. Lots of weddings, traveling, in town events, out of town events, what have you….. Sometimes its hard to keep in touch, even with those who live close to you. Yesterday, for the first time in what seems like ages, we all got together for a little potluck brunch action. It was a pretty mellow day with the men folk watching golf, and the ladies watching Leila play while gabbing away on the sun deck. Just like the good old days!
For my contribution, I made some breakfast quesadillas, mini french toast cups (so easy!), peach sangria, and some chocolate covered strawberries. We thought there was going to be football on, so I made the chocolate covered strawberries look like footballs (**sort of) Turns out, there was no football on, but the strawberries were still eaten.
I am seriously the worst decorator ever! I need to work on my hand steadiness.
mini french toast cups
Courtney made this awesome hashbrown casserole with ritz crackers on top! YUM!
Here’s my plate. Potatoes, more potatoes, quiche, quesadilla
peach sangria. PERFECT brunch drink!
Sparkling Peach Sangria
1 bottle riesling
1 bottle sparkling wine or champagne
3 ripe peaches
1/2 cup fresh mint
Cut the peaches into slices. Combine riesling, peaches in mint in a pitcher and refrigerate until chilled. Add the sparkling wine and enjoy!
So the big news is, guess which almost one year old learned a new trick?
Oh yes people! She’s a walking machine! Can’t wait for her big birthday next month. Hope you all have a great week!
