Well another successful weekend of in-laws visiting has come and gone. I think The Hubs parents had a really good time. The highlight for me was a “sunset” (it was cloudy) drinks and appetizer cruise around San Diego bay. I love to be on a boat, and its awesome to see my great city from the water. Other than that, we just kind of hung out, watched football, and relaxed. Sunday we went to our friend’s house to watch the Chargers game, and I brought this spicy onion dip. I’ve been making this for years after seeing the recipe online and realizing it’s the easiest thing ever to make. My very southern mother in law told me she thought it was missing a little mayo. Typical.
How was everyone’s weekend? Anything exciting happen I should know about? Today I’m starting the official countdown. 24 days until VACATION!!! Boy do we ever need it.
Spicy Tomato and Onion Dip recipe from Yumsugar
8 ounces cream cheese, softened
1/2 large tomato, diced
1 clove garlic, minced
1/3 onion, diced
1 tablespoon hot sauce, such as Frank’s Red Hot, or more, to taste
1 tablespoon sweet paprika
***I use 1/2 T. sweet paprika and 1/2 T. chipotle chili powder
Combine all ingredients together, stirring until fully incorporated
