It’s Monday. I’m feeling brain dead and frustrated over my morning internet speeds, so I’m going to keep the food simple for y’all. Tis the season for fresh-from-the-garden tomatoes, and I turned mine into this spicy marinated tomato salad.
I’m kind of addicted to this Bistro Blends Hot Bistro Oil I was gifted a while back. I roughly chopped the tomatoes I have been patiently waiting for all summer and tossed them with a 1/4 cup of the Hot Bistro Oil , some thinly sliced red onions, and some mozzarella cheese balls. I let the mixture sit in the fridge for about an hour then stirred in some freshly chopped basil and toasted bread cubes. I served the whole thing on a bed of arugula. The spicy oil and crunchy toasted bread made for a nice twist on a standard caprese salad.
Simple right? That’s about all I can handle this Monday.
I’m off to chug a gallon of coffee then go for a run. Hopefully that will get the blood circulating to my brain so I can accomplish everything on my to-do list. It’s hard to get your brain moving again after traveling, but I must try my best!
