I know I promised a major giveaway starting today, but you’re going to have to settle for this simple roasted cabbage instead. Cabbage?!?! Yeah, I know I could have changed the plan with like a cookie or something, but this is just the way things go sometimes.
Despite seeming really boring or old lady-ish, roasting cabbage is actually quite delicious. Its as easy as cut, drizzle and roast. Totally fuss free, and perfect for a busy Monday. I also love roasted cabbage as a meal for one when The Hubs is traveling. You could add a little crumbled bacon, or maybe a grilled chicken breast on the side. For this particular head of cabbage, I topped it with some leftover whipped feta . If I had any prosciutto chips leftover, I would have thrown in a couple of those in as well.
- 1-head of cabbage, quartered
- Olive oil
- Salt and pepper
- Preheat oven to 400 degrees
- drizzle cabbage quarters with olive oil. sprinkle with salt and pepper
- roast 25-35 minutes until cabbage begins to brown and wilt
