My sister in law is no cook (Sorry Steph) However, earlier this year, she and my brother were visiting us, and I made this pasta primavera for dinner. They both loved it so much that Steph asked me for the recipe. The week they left, I got an email from my mom saying “I don’t know what you said to her, but Steph came back from her trip all inspired to cook, and she has made dinner every day this week!”
This dish, truly, is super duper easy. 1-2-3-4
Boil a box of pasta (I use whole wheat farfalle but any pasta is fine). Chop and brown a package of turkey sausage (the original recipe calls for hot turkey sausage but I prefer the sweet turkey sausage….your choice). Drain both and set aside
Chop vegetables and herbs. Really any vegetables will work, but I am using 2 zucchini, 2 yellow squash, about 7 roma tomatoes, one red pepper and 1/2 an onion. I also chopped up about 15-20 fresh basil leaves. (Props to my new knife!)
Saute all the vegetables together until soft in 1/4 c. of olive oil with 4 cloves of diced garlic, 2 tsp chicken bouillon granules, and 1/2 tsp red pepper flakes (I use 1/2 T since The Hubs likes it spicy!)
Mix pasta, veggies, and sausage together. Top with 1/2 c grated parmesan and serve! Yum!!!
