Nothing really says “holidays” like gingerbread men. Last year I bought a gingerbread man cookie cutter that turned out to be a dud (who knew there were dud cookie cutters?!) He was way too fat and all his limbs melted together. This year I opted for soft batch ginger cookies. These were so awesome, but almost too soft. Maybe because I used butter instead of Earth Balance. Yes, these are “skinny” cookies. Straight from the skinny bitch herself, Kim Barnouin.
Soft Batch Ginger Cookies recipe from Skinny Bitch Ultimate Everyday Cookbook
2 cups unbleached, all-purpose flour
½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground nutmeg
1 cup evaporated cane sugar
½ Earth Balance, at room temperature
½ cup applesauce
2 tablespoons molasses
2 teaspoons ground ginger
1 teaspoon grated fresh ginger, or 1 tablespoon small pieces crystallized ginger
1 teaspoon vanilla extract
Preheat the oven to 350 °F. Lightly grease a cookie sheet. In a medium bowl, sift the flour. Add the baking soda, baking powder, cinnamon, and nutmeg. In a separate large bowl, beat the sugar and the Earth Balance with an electric mixer until fluffy, about 2 minutes. Add the applesauce, molasses, ground and fresh ginger, and the vanilla. Beat for 1 minute. Add the flour mixture to the wet ingredients and slowly stir together, being careful to avoid overmixing. Place in the refrigerator to chill for 1 hour and then roll in the dough into small balls and place on the prepared cookie sheet. Lightly press on the dough with your fingers to flatten a little, but make sure they aren’t too thin. Bake about 8 minutes. Let the cookies cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
Since you’re saving on calories with these cookies, maybe you won’t feel so bad spending a little extra on my “splurge” gifts.
There is nothing, NOTHING more essential than a good set of sharp knives in my book! The Hubs and I have slowly been filling up our knife block one at a time whenever we have a little extra money. You don’t have to buy them all at once, but you’ll probably get a better value that way!

Wrapping up here, for my workout I walked to the grocery store and back carrying probably 25lbs of stuff (including milk!) and did a different kickboxing workout on demand that was called KBC or something like that (kickboxing, booty, core) It was pretty good, but not as great as 10lb slim down kickboxing!
