Well, I bit the bullet, and turned on the oven to make these green bean “fries”. I was really hungry, and had a huge bag of fresh green beans from the farmer’s market calling my name. They’re not exactly the best completely raw so into the oven they went!
Making “fries” out of vegetables is actually a pretty awesome thing. You still get a nice warm crunch, but you skip all the nasty oil frying and excess carbs. Sure its not EXACTLY the same (there’s always a time and place for actual french fries) but its not a bad alternative for every day.
I added a little hatch chile powder to my breadcrumbs to jazz these babies up a bit. It was the perfect compliment to the creamy avocado dipping sauce!
