I’ve been kind of on a diet downward spiral the last couple of weeks. Being on vacation in the deep south was not good for my waistline. However, today is another day, so instead of just throwing in the towel entirely, I’m just going to start again.
Lucky for me, I was assigned to Successful 2gether for the Secret Recipe Club this month. Angie’s blog is (thankfully) a healthy blog based on the weight watchers points program. I’ve never done weight watchers, but I generally eat and cook pretty healthfully, so I know a quality healthy recipe when I see one. Angie’s blog is full of them. Added bonus: she’s a total couponer (my kind of girl!) and lists all kinds of great coupons on her blog.
At Camp Blogaway recently, I learned about Gourmet Garden spices. I picked up the ginger and lemongrass versions, the two spices that I have the most difficult time preparing and storing. Let me tell you, they have made my life WAY easier. The fresh ginger really made these pancakes pops. I highly recommend using fresh instead of ground ginger if you can.
Apple Cinnamon Oatmeal Pancakes recipe from Successful 2gether
1/3 cup quick oats
1/4 teaspoon Gourmet Garden ginger
1/4 teaspoon cinnamon
1/4 teaspoon vanilla
1/2 apple shredded/gratedenough water to get desired batter consistency
1 packet of splenda
Mix all ingredients in a bowl and pour in to preheated skillet. Cook, flip and enjoy!
