Broccoli and White Bean Salad

For me, March is the official beginning of spring, and with spring comes a fat crop of delicious broccoli! I’m sure that’s exactly what everyone thinks when March rolls around each year….mmmmmm….broccoli. Ok, maybe its just me.

Broccoli has long been one of my favorite vegetables, and surprise! There’s way more ways to prepare it then just covering it with gooey, melty cheese. Although, that’s pretty darn good too. I’m kicking off the month with this light and simple broccoli and white bean salad. Its perfect to make after a busy day, and it uses up random pantry ingredients, which is always on my priority list.

Artichoke, Kale and Ricotta Pie

We’re about halfway through artichoke month for the all new Seasonal Potluck and I’m still not convinced that I love artichokes. I’ve had an overwhelming response from people saying artichokes are “their all time favorite” so I want to keep at it.
