Dreamy Oreo Brownies

Sorry for the late post today folks! I finally bit the bullet and paid someone to clean my house and they were here ALL DAY. I didn’t want to get in the way, so my photoing and posting had to wait. I can honestly say, I am in love with the housecleaners! (Sorry Hubs) They windexed the picture frames for crying out loud!!! OMG it looks like a brand new house in here. This is for sure in the top 3 best money I have ever spent (FYI #1 is lasik eye surgery, #2 is a king size bed)

Anyway, yesterday my client was throwing a mid-week “company picnic”, which was really  just an excuse for the president to show off his smokers and brisket making skills (and for the employees to get out of work early and drink beer). Never one to turn down a party in lieu of work, I promised to be there. The employees of this company have always been super supportive of this blog (I usually bring them all my baked goods to buy their affection) so I wanted to be sure to bring something awesome, but easy. Its been another rough week in regular job land, so I didn’t have a lot of time for baking adventures. Recently I was checking out the new look of Cookies and Cups blog and came across this recipe. It seemed pretty easy, so I whipped it up between my early morning QuickBooks work and my yoga video.  I’m pretty sure everyone loved it. I described it as one of the most unhealthy things I’ve ever made, but those are the things that always taste the best! Dreamy Oreo Brownies recipe from Cookies and Cups

 

1 box brownie mix (I used Pillsbury Fudge Brownies) – with ingredients to prepare them according to the package directions

 

 

1 (16.6 oz) package Oreo cookies divided equally into 3rds all coarsely chopped
1 (8 oz) tub of Cool Whip thawed in fridge
1 8 oz block of cream cheese softened
2 cups powdered sugar
1 1/2 cups semi-sweet chocolate chips
1 Tbsp vegetable oil
Prepare brownie batter according to package directions, folding in 1/3 of the chopped Oreos.
Bake according to package directions, until a toothpick inserted 1 inch from the edge comes out clean.
Let brownies cool completely.
Meanwhile in your mixer bowl beat the cream cheese and powdered sugar until combined and smooth.
With a spatula fold in the Cool Whip and another 1/3 of the coarsely chopped Oreos.
Spread the cream cheese mixture on top of cooled brownies.
Now in a microwave safe bowl melt the chocolate chips and the vegetable oil on medium power for 1 minute.
Stir and repeat in 30 second increments until melted.
When chocolate is melted spread evenly over the cream cheese layer.
Now sprinkle the remaining Oreos on top of melted chocolate.
Refrigerate for at least 30 minutes or until ready to serve.
Cut into squares.
