No Bake Peanut Butter Energy Bites

To combat the Monday following an amazing weekend girls trip blues, I’ll be drowning my sorrows in these no bake peanut butter energy bites today. Seeing as I also came back with a bit of a cold, I will also be ingesting tons of juice and vitamins as well. I guess there’s a downside to every wild weekend, but the good times from our Napa trip far outweigh the crappiness of this head cold.

My girlfriends and I had the MOST fun time ever in NorCal. Tons of wine, fancy meals, baby hugging, and non-stop laughter. It is so important to make time for those you love in your life. I mean, after all, why even bother working and earning money if you don’t use it to spend time with people who enrich your life?

They are super fast and easy, and can be made with pretty much anything you have in your pantry

No Bake Peanut Butter Energy Bites

Ingredients

  • 1 cup old fashioned oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flaxseed
  • 3/4 cup chopped, pitted dates
  • 2 T sunflower seeds

Instructions

  1. Mix all ingredients together in a medium bowl. Refrigerate for one hour. Roll into teaspoon sized balls and store in the fridge.
