Gotta love all the fresh veggies available this time of year. This weekend, our friend Amy brought us a variety of peppers and tomatoes from her amazing garden. The Hubs promptly made some salsa and I used the leftovers in these delicious veggie quesadillas (which we topped with The Hubs’ salsa!) You can use pretty much any veggie/cheese combination you can imagine. I used bell peppers, jalapenos, tomatoes and scallions plus mozzarella and feta
Also this weekend, I whipped up this potato salad with fingerling potatoes, tomatoes, red onion and zucchini. Anytime I find myself with an ingredient that I can’t think of anything to make with it, I just google it! I surf the recipes until I find one that contains other ingredients that I already have in my kitchen so I don’t have to go out to buy anything. Not only do I usually find new delicious recipes, I also find new websites that I can reference the next time I’m stumped on what to make for dinner. I bookmark all my recipe reference sites and organize them in folders by course (ie. breakfast, lunch, dinner, appetizers etc.) but that’s just me. I’m nerdily organized like that.
