I’m busting at the seams with excitement these days! I’m heading to Napa this weekend, then on vacation the following weekend, then my bestie is coming for a visit the weekend after we get back. This month is going to be AWESOME!!! Unfortunately, as it usually happens before a vacation, my workload is unbearably large right now. I’ve been very focused and dedicated to my uber detailed to-do list, and can happily report that I’ve been knocking out tasks one by one. I’m sure next week will be a total work disaster/slack off fest, so I’m doing my best to get everything done this week. This includes my own taxes.
When you work on taxes for corporations, that March 15th filing deadline is like a ray of sunshine. The last thing I want to do after that is fish through a year’s worth of my own receipts. Its even harder when I know I’m not getting any money back. Yuck. To simplify in other areas of my life, I make “meals” like these watermelon bites.
Last month I went to a Creative Connection event that featured a great local catering company, Cork and Platter Catering. Maria did a demonstration on how to make simple, yet elegant appetizers for any event, one of which were these watermelon bites. I’m pretty sure she didn’t mean cut up half a watermelon, make a plate of these, then eat the whole plate by yourself for dinner, but that’s what I did. They are so refreshing and addicting! (not to mention pretty darn healthy if you’re working on your vacation bikini bod like me)
It’s as easy as 1-2-3
1. Cut watermelon into chunks and scoop out a little hole using a melon baller or small spoon
2. Stuff the hole with feta cheese and a mint leaf (my mint plant is huge now, so this worked out perfectly)
3. drizzle with balsamic glaze (you can find this at a specialty grocery or online)
