Ok, April was pretty nice, but its been raining today and I thought people could use a bit of cheer! I haven’t been baking all that often lately, so I was excited to bust out these SUPER cute cupcakes I saw on Marthastewart.com There’s something about a novelty cupcake that justs makes me smile. I didn’t follow any of the cupcake recipes Martha recommended, instead I used a variation of the best ever cupcake recipe I adapted while making my Key Lime Pie Cupcakes (best cupcakes in the history of the world BTW) I used lemon cake mix and lemon pudding mix for these babies. Instead of Martha’s sprinkles, I used toasted coconut which I dyed green with food coloring, and I used Blow Pops instead of your standard lollis, which I could not find ANYWHERE! I think they came out really great.
Not to toot my own horn or anything, but I’m becoming a pretty darn good cupcake maker! Maybe my decorating skills could use some practice, but my cakes are always perfectly moist and all a uniform size! I was so proud when these came out of the oven!
