One thing I love about summer is plentiful amounts of fresh produce. Blueberries in particular are a true “summer food” in my opinion. When I was a kid, my brothers and I would pick wild blueberries by the bucketful at our cabin in northern Minnesota. I was SO excited when this week’s grocery circulars came out and I saw Henry’s had blueberries on sale for 77 cents! I immediately told my husband we were having blueberry pancakes for dinner on Wednesday (he didn’t seem to mind) I walked over to the store first thing this morning and bought the limit. (My mom always said when something has a good price, go in, buy the limit, take it out to your car, then go in and buy the limit again. I did not do this, but considered it)
May I present blueberry day! Maybe I should clarify here that I am in no way a professional chef. I LOVE to cook and I like to try new things but I consider myself more of a recipe follower. I am happy to say that the 2 new recipes I tried today were a HUGE success and I will be adding them to my book of awesome recipes.
The first recipe I made was the lemon blueberry muffins from Cookinglight.com Lemon and blueberries are a great match (and if you know me, you know I love all things lemon!) I made mine mini muffins because everything is cuter in miniature.
Next I made some AWESOME blueberry pancakes for dinner. Now, my mom makes a mean blueberry pancake, don’t get me wrong, but I opted to make the blueberry buttermilk pancakes from cookinglight.com. The muffins also called for buttermilk so I figured if I was buying it anyway, I might as well use it in both recipes. Buttermilk is such a pesky ingredient because its not sold in a pint and most recipes don’t call for very much so I always end up throwing more than half away. I did read once that you can “make your own buttermilk” by adding one tablespoon of lemon juice to one cup of milk and let it stand for 5 minutes. I tried this once when making a lemon cake and it seemed to work just fine.
Oh man, I am SO STUFFED right now!!! I’ll be spending the evening doing another summery activity, watching baseball. I still have 3 packs of blueberries left. I’m thinking of working out some blueberry popsicles with my new popsicle molds or perhaps a champagne cocktail with blueberries…..drool.
