Good Monday to you all. As the first holiday party of the season we attended over the weekend has already forced me to swear off drinking for the rest of my life, I’m actually anxious to get back to work today. Tax season, my nemesis, is looming, and its important that I stay on top of all my work so January, February, and March don’t wind up being a total nightmare.
Anyway, before the party, I thought it would be a good idea to eat a hearty breakfast. We’ve been to other holiday parties with this crew before, and am fully aware that they can get pretty sloppy. I, of course, found the healthiest ‘carb heavy’ breakfast I could possibly find. I received Skinny Bitch: Ultimate Everyday Cookbook, for my birthday this year, and this was the first recipe I’ve made from it. All the recipes in the book are vegan, but I modified this one to use what I had on hand.
