Yay! Friday! Man, this week was a killer! To celebrate the beginning of a perfect weather weekend here in San Diego, I made my “fanciest” dinner. Chicken fingers served with pink champagne. Andre. The good stuff. Ok, ok, not fancy but two of my favorite things, and darn it, I earned it!
I made my fingers healthier by following this “oven frying” recipe from cookinglight.com. I substituted panko for the cornflakes because that’s what I already had. This is a great, EASY, option if you have kids and don’t want to serve them processed, frozen crap from a bag. Tip: I never have buttermilk so I mix one tablespoon of lemon juice (I always have lemons) with one cup of milk and let it sit for 5 minutes. Voila! DIY buttermilk
