Ok, not the most exciting foodstuffs I’ve ever posted, but I’m sure you can understand my slow start back into post holiday “real life”. Sometimes you just gotta have sandwiches for dinner. I’ve always got a bag of frozen chicken breasts on hand for those not-so-inspired meals. On this particular day, I imagined them topped with bacon and pepper jack cheese. Easy, healthy, and perfect for those times when you’re feeling too lazy to really cook!
After the great pantry experiment from last year, I’m going to make a conscious effort in 2012 not to let my pantry get overloaded like that again. Easy meals such as this are a great way to use up some excess stuff that might be taking up space. I made these sandwiches with bacon, pepper jack and mixed greens only because that is what I had on hand. If I had a tomato or an avocado, I for sure would have added those. I could also see this being awesome with ham, cheddar, mustard, apple, onions, BBQ sauce, peanut sauce, blue cheese, or a million other things (not all together of course).
I know a lot of people want to save money or lose weight for their new year’s resolutions. Well, here’s your chance. If you have a fridge and pantry full of food, don’t eat out. Challenge yourself to be creative and figure out a way to use what you have (already paid for). It doesn’t have to be fancy or time consuming to be healthy and satisfying.
