Yesterday I posted my lonely dinner menu. I wanted to rep my veggie friends, so I decided to post another dinner for one, this time vegetarian, that I ate earlier in the week.
Just like when I serve salad for dinner, The Hubs doesn’t love when I make these stuffed peppers for dinner either. He never feels like he gets enough to eat so I always try to reserve these for when he’s out of town. I love them, and they are a great portion size for me!
I have made these with many different types of beans; from black beans, refried beans, pinto beans, you name it. I have also used a variety of onion/veggie/cheese combos. The ones shown have black beans, red onion, red pepper and sharp cheddar. Just make do with whatever you have in your fridge or pantry!
First, get yourself a poblano pepper or two
Halve them, seed them, then char them on a grill for a few minutes
Make your filling mix and put the peppers in a shallow baking dish
Stuff the peppers and top them with cheese. Broil them in the oven for a few minutes until the cheese melts!
If you have any leftover the next day, chop them up and make a mexican scramble!
As yummy as these were, I’m happy to not be eating dinner for one any more this week! The conference is over, my friend Krista arrived from Chicago last night, and my other friend Katie is flying in today!
