Wow! I LOVE these quesadillas! A great and quick option if you don’t feel like cooking. I baked up a couple of chicken breasts but you could easily use a pre-cooked rotisserie chicken from the grocery store. Being able to use seasonal fruit in this way makes for something a bit unexpected.
Something I always have on hand at my house is a large, pre-made salad. Every trip to the grocery store I buy a ton of veggies and spend a half hour or so cutting and chopping so we always have a fresh salad on hand. It really makes it easy to choose a healthy option when you’re staring in the fridge wondering what to eat. Totally effortless! Plus, making your own salad is MUCH cheaper than buying the salad in the bag if you are budget conscious like I am. A fresh salad is such a great base for so many things. I put whatever meat is leftover from the night before on top for lunch. You can add beans one day, nuts and fruit another day, cheese another day (or all at once) It doesn’t have to be like eating the same boring salad over and over. I also have been known to cook an entire package of chicken breasts while making the salad. Keep a tupperware full of pre-cooked chicken around for a sandwich (or quesadilla!), top the salad with it, shred it for tacos or whatever you can imagine. Doing all the prep when you’re feeling motivated makes the food selection when you aren’t motivated so much better.
