Ha Ha! This reminds me of living in the dorms in college. One night they would serve tacos for dinner. The next night; taco casserole. The next night; taco soup. Way to work out those leftovers cheapo Florida Avenue Residence Hall!
Anyway, I did NOT make tacos yesterday. These ingredients have only been used in soup form. This soup is unbelievably easy to make, and goes to show you that you can pretty much throw anything into a pot and call it soup (got that all you soup fiends ?) 1/2 lb ground turkey
1 15oz can pinto beans rinsed and drained
1 15oz can diced tomatoes with chilies, undrained
1 8oz can corn, drained
1 1/2 c. water
2T. taco seasoning
4 1/2 t. dried ranch dressing mix
brown turkey in a large saucepan. Stir in remaining ingredients. Bring to a boil, reduce heat and simmer for 30-35 minutes. Top with tortilla strips, cheese, avocado, cilantro or whatever other “taco like” toppings you have laying around!
